Rolo Cookies- AKA the easiest cookies you'll ever make!

These cookies are the easiest, fastest, and most delicious cookies you'll ever make.  And you'll make them again, and again, and again!  Rolo cookies are always a crowd pleaser and great to take to any get together!



what you need:
a package of Rolo's caramels
a box of Devils Food Cake mix
2 eggs
1/3 cup oil
powder sugar (optional)

Mix cake mix, eggs and oil together in a bowl.  Take a small ball of dough and ball it around an unwrapped rolo.
Bake for 7-8 minutes at 350 degrees.
Remove from oven and transfer to a cooling rack.
Sprinkle with powder sugar.

Ritz Peanut Butter Chocolate Crackers

These Ritz peanut butter chocolate crackers are so easy to make and satisfy any craving.. Salty, peanut butter and chocolate, those are always my 3 big cravings!  I bet everyone has these ingredients sitting in their pantry.  It's such a fast snack to make and there's no way to screw these up!  I made these for my primary class one morning and they ate it up so fast!

what you need:
Ritz Crackers
Creamy Peanut Butter
Chocolate baking melts (chocolate chips work just as well too)

-Spread as much peanut butter over the Ritz cracker.
-Melt the chocolate in a microwave safe bowl in increments of 30 seconds, stirring in between until melted.
-Dip the peanut butter side Ritz cracker into the melted chocolate 
-You can eat right away, or you can try to wait like me and put the crackers in the fridge or freezer until the chocolate melts.
And there it is, the easiest snack ever!

Coconut Chicken Curry

My brother in-law and sister in-law got my husband and I hooked on Thai food.  I was always so afraid to try it because it looks so exotic and I'm such a boring person.  Our favorite Thai dish is coconut curry, it is so yummy!  I never thought about making it before because it seems so hard, but I cheated.  I went to Whole Foods for the first time (I can't believe I'd never been there before!) and found a whole aisle dedicated to Thai food.  There were so many jars of different curry.  Of course I picked out the coconut one.  I bought the jar of curry and some Jasmine rice (pictured below).  


what you need:

thawed chicken cut into pieces
jasmine rice
curry sauce


Cook the chicken until cooked through.
Follow the direction on the jar of curry, and cook rice according to the package.


 

This is one of the fastest and easiest meals, and it taste like you'd been cooking it all day!                 It's defiantly worth a try!

Crock Pot Creamy Ranch Chicken

This recipe is delicious and super easy.  It only takes about two minutes to throw it all together and you've got dinner!

what you need:

3-4 boneless chicken breast
1 can cream of chicken soup
1 envelope of dry ranch dressing mix
1 can chicken broth
1/2 tsp garlic powder
1/2 tsp parsley flakes
1/4 tsp paprika
1/4 tsp oregano
1 8 oz block cream cheese


-Place the chicken in the crockpot.
-In a separate bowl mix together all ingredients expect for the cream cheese and pour over the chicken.
-Cook on low for 5-6 hours or high for 2-3.
-Remove the chicken and shred it.  While the chicken is out, add the block of cream cheese to the crock pot and stir it in until melted. 
-Put chicken back in the crock pot and stir around until coated with the sauce.  
-Serve over noodles or rice.

The Best M&M Chocolate Chip Cookies You'll Ever Eat!

I'm not even lying to you all when I say these are the greatest cookies ever!  And it's all thanks to one special ingredient that I'll list below.  I can never just make regular chocolate chip cookies anymore, I HAVE to make these M&M ones.  Every time I make these cookies, I always have a handful of people who ask for the recipe.  So here it is!



what you need:

1/2 cup butter, softened (1 stick)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1/2 tsp vanilla extract
1 1/2 cup flour
1/4 cup instant vanilla pudding mix (the secret ingredient!)
1/2 tsp baking soda
1/2 tsp salt
chocolate chips
mini m&m's
(I don't want to tell you how much chocolate chips and m&m's to put in because I put in a lot of both, just eye it and see how much you'd like.  I always use more m&m's than chocolate chips in this recipe.)


1)  Preheat oven to 350 degrees.
2)  In a large mixing bowl, cream together the butter and sugars until well combined.  Add the egg and vanilla.  When combined, add the flour, pudding mix, baking soda, and salt.  Mix until it forms to dough.  Add in your desired amounts of chocolate chips and M&M's and mix until combined.
3)  Scoop the dough with a medium cookie dough scoop onto a large cookie sheet.  If you don't have a cookie dough scoop, roll the dough into 1 1/2" balls. Bake for 10-12 minutes.  
(make sure you leave the dough like this and don't press the dough down at all)


Let the cookies cool on the sheet for 5 minutes and then transfer to a cooling rack.


Enjoy!
And don't be embarrassed if you eat 5 of these bad boys in one sitting!


Makes 2-2 1/2 dozen.

Crock Pot Sticky Sweet & Sour Chicken

I'm so excited to finally have a camera again!  Apparently our old camera couldn't be fixed, so we took the money from that and upgraded to a Sony NEX 5-T.  This camera is pretty awesome.  I literally can't stop taking pictures!  Hopefully now my food pictures will look more appetizing to you all.
Who doesn't love sweet and sour chicken?  This recipe is so yummy and of course, easy!  This is defiantly a dinner that the whole family will love!


what you need:
2-4 frozen boneless chicken breast
3/4 cup of packed brown sugar
1/4 cup flour
2/3 cup water
1/3 cup white vinegar
1/3 cup soy sauce
2 Tbs ketchup
1 Tbs dried minced onion
1 tsp mustard
1/4 tsp garlic powder
1/4 tsp pepper
1/4 tsp salt

- Spray the crock pot with non stick spray and add the frozen chicken.
- In a small sauce pan, add the brown sugar and flour.  Combine.
- Add the water, vinegar, soy sauce, ketchup, onion, mustard, garlic, salt and pepper.  Stir together.  
- Bring to a boil, when the sauce is thick (will take about 2 minutes), remove from heat.
- Take the sauce and pour over the chicken.
- Cook on low for 5-6 hours or high for 3-4.
- Shred the chicken with two forks and serve over rice.
Serves 2-4 people.
